Quick and easy 'cheap and cheerful' recipes

After a long day at work, your honey calls to say that he’ll be home for dinner soon. Oh, and he’ll be bringing some of his co-workers who are visiting from out of town. Don’t get your knickers all in a bunch. For dinner, you can make these quick and easy recipes that will make you the perfect hostess.

Most of the ingredients are already in your pantry and take little time to make. I always say, “Cheap and cheerful can take the stress out of preparing dinner.”

Oh and try this helpful hint. Wear an apron while preparing the food so you won’t have to change twice before company comes over.
Quick and Easy Recipes:

Veggies in a Snap: Chop some fresh vegetables (or you can use frozen vegetables) such as broccoli, carrots, red peppers and cauliflower and place them lightly oiled cookie sheet. Pour 2 tablespoons of olive oil, a couple of pinches of kosher salt, some pepper, garlic and add some rosemary over the veggies. Place into the oven at 400 degrees for about 25 minutes, flipping the veggies half way through. And then voila!

Yummy garlic bread: Cut fresh bread into small halves. Add some fresh garlic, salt, a little olive oil and then top off your creation with little mozzarella cheese. Place the bread on a cookie sheet and cook in the oven at 400 degrees for 10 minutes. So good!

Stick to your diet Caesar Salad: For a tasty and easy to make Caesar salad, use about three cups of romaine heart lettuce and place into a bowl. Chop up an English cucumber, red peppers and chopped chicken. Mix 4 tablespoons of a light Caesar salad dressing with the juice of one lemon. Pour dressing over the salad. Top off this wonderful salad with croutons and Parmesan cheese.

Quick fruit salad: Cut up pieces of fruit and place them into a bowl, add 2 teaspoons of vanilla and sugar to the fruit. Cover the bowl with saran wrap and chill in the fridge until your ready for dessert. Before serving, pour some applesauce over the fruit. Enjoy!

I use that bread all time but I also add a bit of parmesan cheese to it too. Spaghetti is always quick and easy.

thats is really cute apron.

My relatives comes over most of the time uninvited so i always have to come up with things to make. My fav one that I would make all the time is burschetta but instead of french bread i use pan dulce which is a sweet mexican bread. I prep my toppings first like tomatoes. red onions, salt, pepper and olive oil. Then I cut the bread in half coz they look like dinner rolls. Then toast them in the oven then put the topping and sprinkle parmeasan :) My family devour these bad boys lol.

My husband knows better than to ever invite a bunch of people over for dinner. He doesn't want to risk them all being poisoned by my awful cooking. Oh he doesn't want to be embarrassed when I bring out a Digorno pizza and call out, "Dinner is served!"
